Yeast and sourdough are not the same!

Oddly enough, today some people are beginning to call sourdough “wild yeast”, but that’s usually wrong. I think it’s a mistake to mix the two together. While sourdough still contains wild yeast, it is primarily a fermented mixture of flour and water, where lactic acid bacteria come into play. Harvest yeast around you!

You heard: yeast is everywhere in the air. Now all you have to do is capture it in a medium and refine it. It’s actually quite easy if you manage to stop the growth of bacteria. It means,very clean workkey.

I’m going to explain two different ways to make yeast, although so far I’ve only tried one myself and the other version is the result of some research. What you won’t get – and I’m just mentioning this so you won’t be disappointed – is a block of fresh yeast as delicious as some lucky ones get from bakeries or even the grocery store. However, your homemade yeast will work just fine!

Important! You cannot control the growth of your wild yeast and it is likely that along with the yeast some harmful bacteria will also grow. If you are pregnant or have a compromised immune system in any way, you should not use homemade yeast.

Here is the method I tried and it works perfectly.

  • 500ml filtered water
  • 12 days
  • no sulfur
  • or rather raisins, pieces of fresh apple or other pieces of fresh fruit or vegetables (but not bananas!) that are organic and unwashed!
  • 1 tsp. sugar or honey
  • Clean cans, jars or glass bottles
  • Ceiling loss

Mix yeast water

  • Clean the pitcher with hot sparkling water (1 teaspoon of club soda per liter of hot water) and rinse with hot water.
  • Put the dates (or alternative) in a bottle/jar, add sugar and water. If necessary, cut the product into smaller pieces to fit the bottle or jar.
  • Close the lid tightly but don’t overtighten it, loosen it a bit to let the air out.
  • Place the pot in a warm place but out of direct sunlight.
  • Leave the jar there for 3-8 days while you open the lid once a day to exchange the air and release the pressure from there then close the lid, shake the bottle well to let the oxygen into the water. Then open the lid again.

And after?

  • After 2-3 days there will be air bubbles.
  • At the next stage, the water will become cloudy and the amount of foam will increase.
  • When the air bubbles are reduced, the glaze is ready for use. The water should smell slightly fermented but not like mulled wine or an unpleasant burnt smell. If you shake off the water, more foam will appear.

How to use it

  • Take the yeast out of the fridge from time to time before baking and leave it at room temperature.
  • You will need a little more than ½ cup or 100 ml to 135 ml for 500g of flour. This is equivalent to 1 packet of dry yeast.
  • Before using the yeast, shake the jar as the yeast is usually at the bottom.
  • For your bread recipe, reduce the amount of liquid by the liquid you add with the yeast water. Example: Your recipe calls for 200 ml of water. You use 135ml of yeast water, so you only add the remaining 65ml of water to the dough.
  • Be prepared for your dough to have more time to test than usual. Adding time depends on the strength of your icing.

How to store yeast water?

Your yeast juice will keep for up to 2 months in the refrigerator. When using yeast water, try to keep 200ml and refresh it with a fresh day, 1 tsp. sugar and add 300 ml of water. Store in a cool, shaded place for two to three days and use or store in the refrigerator if the characteristics previously described can be observed.

Grandma’s Yeast Recipe (Grandma’s Yeast Recipe)

  • 1 potato (medium size)
  • 1 liter of water (= 4 cups)
  • 1 tsp. salt
  • 1 tsp. Street

How to do it

  • Boil potatoes in water until tender.
  • Remove the potatoes from the water, but save the water for later.
  • Mash potatoes and add sugar and salt. To mix together.
  • Now add some cooled potato juice to make a paste and mix well.
  • Cover with a little cloth and set aside in a shady place in your kitchen.
  • After a few days, it will bubble. If it stinks, get rid of it, it’s gone bad.

How to use it

Use 1 tbsp. this yeast instead of 1 tbsp. (= 1 packet) dry yeast.

Put it away and refresh it

Store your potato yeast in the refrigerator.

If you want the potato yeast to multiply, add a little flour and a little sugar and water to nourish. Mix well and leave at room temperature for another 2-3 days, then use or refrigerate.

Other methods of making yeast

I’ve come across other methods of making homemade yeast, but they involve ingredients like hop buds and are quite complicated. Why complicated, when easy will suffice? I like simplicity and efficiency, which is why I stick to these two methods. There’s no method I’ve found that will give you anything like fresh, store-bought yeast.

Three more tips

If you still have some dry yeast left over (any kind) and you’re running low, you can use some in your yeast broth to speed things up a bit.

If you are new to glazing, start with two to three batches. If one or even two errors, you can always have a third batch of work. Remember: it is important to work with clean tools.

If your homemade yeast is moldy or stinks, throw it out.
