Dehydration at 125°F or 52°C until beans are crispy and no longer moist. Depending on humidity level, this can take 10-12 hours – check your grains at 6 or 8 to see how they are progressing to help you better measure time. .

How to use dried green, yellow or red beans

To use dried beans, you can either rehydrate them in hot boiling water or add them directly to foods that contain a lot of liquid and will cook for at least 30 minutes or more (eg soups and stews) .

Compared to other vegetables, I find that dried chickpeas take a bit longer to lose water, and this process works best with hot water that boils or cooks for a long time. Soaking beans in cold or lukewarm water is not good.

To rehydrate the beans, place the beans in a bowl and rinse them in boiling water for at least 15 to 25 minutes. Cover the dish to trap the steam. They won’t look like fresh or frozen beans, but they’ll be delicious when used in casseroles or other dishes.
